Here is one of our favorite recipes. It may say soup, but it starts with grilling!

Chicken Tortilla Soup

1 Onion Chopped

3 Cloves Garlic, Minced

2 Tablespoon Olive Oil

2 Teaspoons Chili Powder

1 Teaspoon Dried Oregano

1 (28 ounce)Can Crushed Tomatoes

1 (10.5 ounce)Can Chicken Broth

1 1/4 Cups Water

1 Cup Whole Corn Kernels, Cooked

1 (4 ounce) Can Chopped Green Chilis

1 (15 ounce)Can Black Beans, Drained & Rinsed

2-3 Boneless Skinless Chicken Breasts

Crushed Torilla Chips

Shredded Monterey Jack Cheese

John Henry Sugar Maple Rub

Living in beautiful Sunny St. George in the summer can seem a little overly warm in the summer.  My Air Conditioner runs enough as it is on these hot days and I have a simple trick to not add more heat in my house. 

I GRILL EVERYTHING!

Cooking on your grill in the summer months will keep a lot of extra heat out of your home.  The Big Green Egg is my personal grill of choice, but a gas grill will work too.  One of our family favorites is Chicken Fajitas! 

I use a round Cast Iron Pizza pan over direct heat.
